El Remolkito del Sirloin are the creators of the sirloin trompo.

It all began in 1998, with a grill set up in the garage of a home in Tabasco.

It was there—between smoke and seasoning—that the idea of putting sirloin on the trompo was born. After many trials and turns over the fire, in 2004 the first sirloin trompo in Mexico came to life.
