In 2011, Carlos Gaytán received the “Chef of the Year” award from the American Culinary Federation.

In 2013 his restaurant Mexique received a star from the famous MICHELIN guide.
In 2014 he retained the MICHELIN Star.
Tzuco was awarded Bib Gourmand Distinction by MICHELIN Guide in 2021.
His restaurant Ha' (XCARET) awarded first Michelin Star (2024) at the inaugural Mexico Michelin ceremony, making Carlos the first chef to earn a Michelin star both inside and outside of Mexico. Ha' retained the Michelin Star in 2025.
Carlos serves as President of Bocuse d'Or Mexico.
